Chicken & Turkey Sausage Gumbo

ImageTonight’s healthy crockpot recipe comes straight from the “New Complete Cookbook” by Weight Watchers. Fresh peppers, onions and celery, mixed with corn, okra, chicken thighs, italian turkey sausage and spices make for an extremely flavorful, filling dinner. It’s only 7 points, and if you have it spare, for an additional 2 points, serve it with a side (1/2 cup) of cooked rice.

Weight Watchers Chicken and Turkey Sausage Gumbo

Ingredients

1 medium onion(s), chopped
1 medium green pepper(s), seeded and chopped (I used a red bell pepper)
2 stalks celery, chopped (medium)
3/4 pound(s) skinless chicken thigh(s), trimmed of all visible fat and cut into 1 1⁄2-inch chunks
3/4 pound(s) raw turkey sausage, Italian, cut into 2-inch chunks
1 Tbsp Cajun seasoning
2 cup(s) reduced-sodium chicken broth
14 1/2 oz canned stewed tomatoes
3 Tbsp all-purpose flour
3 Tbsp water, cold
10 oz frozen okra, sliced
1 cup(s) frozen corn kernels

Instructions

Place the onion, bell pepper, and celery in a slow cooker. Place the chicken and sausage on top of vegetables; sprinkle with the Cajun seasoning. Add the broth and tomatoes. Cover and cook until the chicken, sausage, and vegetables are fork-tender, 4–5 hours on high or 8–10 hours on low.

About 50 minutes before the cooking time is up, combine the flour and water in a small bowl until smooth; stir in about 1⁄4 cup of the hot liquid from the slow cooker until blended. Stir the flour mixture, okra, and corn into the slow cooker. Cover and cook on high until the mixture simmers and thickens slightly, about 45 minutes. Yields generous 1 1⁄2 cups per serving.
